Açai coconut bars

Coconut bars with the delicious flavour of açai. What a perfect combination! And as icing on the cake, our delicious 72% Dark Belgian Chocolate! It can't get any better! 🩷😋
 

Ingredients

First layer

  • 15 dates
  • 3 tbsp oatmeal
  • 50 ml maple syrup
  • 100 ml coconut oil
  • Vanilla extract

Açai coconut layer

  • 250 grams coconut cream
  • 35 gr pistachios, finely ground
  • 85 gr walnuts, finely ground
  • 1 tbsp maple syrup
  • 3 tbsp açai powder
  • 50 gr coconut milk

Topping

Let's get started! 

  • Finely grind all the ingredients of the bottom layer.
  • Put into the mould and press with the rounded side of a spoon. If necessary, wet the spoon with water.
  • Place in the freezer for a while.
  • For the açai-coconut layer, heat the coconut cream and coconut oil with the maple syrup.
  • Add some coconut milk to the mixture.
  • Add ground pistachios, walnuts and açai powder and place in the freezer for an hour.
  • Melt the dark chocolate au bain-marie and decorate the top layer.
