Chocolate Marble Cake

Ingredients (for 8 people)
- 25 grams FOODIES-PLANET® Rice Milk Chocolate
- 25 grams FOODIES-PLANET® 72% Dark Chocolate
- 17 grams melted vegan butter
- 40 grams vegan cocoa powder
- 4 tbsp boiling water
- 250 grams all purpose flour
- 2 tbsp organic buckwheat flour
- ½ tsp baking powder
- ¼ tsp sodium bicarbonate
- ½ tsp baking powder
- ½ tsp fine salt
- 180 grams granulated sugar
- 150 grams vegan yogurt
- 180 ml soy or almond milk
- 1 tsp vanilla extract
- (A few mint leaves)
Let's get started!
- Preheat the oven to 160°C.
- Cover a baking sheet with baking paper.
- In a small bowl, whisk together the cocoa powder and boiling water. Set aside to cool completely.
- In a medium bowl, whisk together the pastry flour, buckwheat flour, baking powder, baking soda and fine sea salt. Set these aside as well.
- Mix the granulated sugar, vegan yogurt, soy milk, vanilla extract, vinegar and melted vegan butter on high speed.
- Once smooth, gradually add the mixture to the dry ingredients. Whisk between additions so that the mixture is completely combined and smooth.
- Place a small half of the batter in a medium bowl, add the cocoa mixture and whisk until combined.
- Pour a thick layer of vanilla batter on the bottom.
- Now pour a layer of the other batter on top in the baking pan.
- Repeat steps 8 and 9, making sure to switch batter each time. Also add small cubes of rice milk and dark chocolate per layer. Repeat until the baking pan is filled and the chocolate chips are used up.
- Using a bamboo skewer, make swirls in the batter. Make sure the batter does not mix too much.
- Place the baking pan in the oven for 60 minutes.
- Remove the cake from the oven and let it cool for 15 minutes.
- Once cooled, the cake is ready to be sliced and served.
